Place springform pan in a water bath and bake for 15 minutes. With tip of knife, run blade through cheesecake, swirling mixture together. Bake in 150°C preheated oven from 1 hour to 1 hour and 10 minutes or until the mixture is firm from the middle when touched by finger. Cool and refrigerate for at least 6 hours. Cover the outside bottom and sides of the cake pan with aluminum foil then place in a roasting tray filled with some water (Bain-Marie). Reduce temperature to 325 degrees and cook an additional 40 to 50 minutes, until center of cheesecake is set.
